Simple, healthy and delicious
Finding more time in our day is something we strive for daily. We look for more efficient kitchen gadgets, more powerful smart phones, and computers to handle most of our paperwork as we strive for more quality time, for not only ourselves, but for the family.
Cooking is something we have to do daily and I am sharing one simple cheat recipe for chicken casserole, which is super easy. This dish was introduced by a friend of mine. I am sure your children and you would love and enjoy this casserole dish .
Ingredients:
- 3 Tbsp cooking oil
- 1kg Chicken breast/fillet
- 3 large potatoes
- 2 large carrots
- 1 cup of frozen peas/frozen vegetables (peas/corn/capsicum)
- 1 large can of creamy soup – can be either chicken/ corn or vegetables
- 1 large onion
- 1/2-1 cup of water
Preparation:
- Cut chicken, potatoes, carrots and onion into smaller pieces
- Heat the oil on high
- Stir fry onion until slightly brownish (1 minute on high heat)
- Add carrots and stir fry for 1 minute, add 5 Tbsp water, and close the lid for 30 seconds (lower the heat while steaming).
- Add potatoes, add half cup water, and continue steaming for another 3 minutes on a low flame.
- Finally, add chicken, stir fry, and if need be add more water (to make sure the potatoes and carrots do not stick onto the pan). Close the lid, and simmer on low heat for 2 minutes.
- Add peas and canned soup, stir and simmer for 3 more minutes on medium heat.
- Remove the lid, stir to make sure the meat is cooked through, and the potatoes and carrots are soft.
- Serve hot!
Cook’s note:
The amount of water depends on the type of soup you use. If it is a creamy soup, your dish is going to be creamy and not as liquid. However, if it is a canned soup, take into account the dish is going to be more watery than the creamy version. Adjust the amount of water you use.
How can your children help?
They can help with cutting the potatoes, carrots and onion. Deciding on which vegetables to add, i.e. red or green capsicum? How colourful they want the dish to be etc.
Involve your children when you are cooking. They love to help and there is lots to learn in the kitchen. Make cooking time a fun time to connect and bond with your children.
